Butter beans, ham and asparagus

Half Hour Meals

Apart from being good store cupboard standbys, good-quality butter beans and chick peas are great when they are mixed with seasonal ingredients. Both the ham trimmings and the excess fat are perfect to add as flavourings to enhance dishes, especially roast potatoes.

1 onion, peeled, halved and finely chopped
4-5 tbsp olive oil
trimmings from a pata negra ham, chopped
1 x 400g jar of butter beans
200ml chicken stock
12-16 asparagus stems
Salt and freshly ground black pepper

Gently cook the onion and ham in the olive oil for 3-4 minutes until soft, then add the butter beans and stock, season and simmer for about 10-15 minutes until the stock has reduced to just a few tablespoons.

Meanwhile, trim the stalks from the asparagus and discard. Cook the asparagus for 5-6 minutes until tender, then drain. Cut the asparagus into 3-4cm pieces on the angle and toss into the bean mixture.
